Domaine 47N3E Chablis Cairn 2022 (750ml)

Tasting : Confidentially, the Chablis Cairn releases beautiful engaging floral notes, accompanied by delicate fruit. Well-balanced in terms of structure, it maintains a nice tension, minerality, and a very pleasant persistence

Planted in 2000 by Christian Michaut, this 39 are vineyard located in a micro valley, is part of the birth of Domaine 47N3E.

This is a plot steeped in history, planted with rootstocks generally reserved for Grands Crus. These rootstocks adapt perfectly to the plot's loamy, clayey soil, but are demanding and susceptible to disease pressure, which requires me to work these vines separately.

Cairn also requires special attention during the harvest, in order to harvest the grapes at their peak of ripeness. The grapes are pressed immediately, and the clear juices are vinified in stainless steel vats. Gentle fermentation is driven by the yeasts and bacteria naturally present in the grape juice and in the cellar. 

Cairn is a Chablis with a strong personality. After alcoholic fermentation, it is aged for 12 months in vats and new oak barrels from the Bertanges national forest to perfect its characteristics.
