Late December saw the rain disappear, leading away from the La Nina weather pattern and towards a drier, warmer El Nino period. It was a mild summer with no extremes of heat, whilst remaining warm. Being more continental it also experiences greater extremes in temperatures bringing more frequent frosts, snow and heat waves. Fermentation temperatures peaked at around 32°C and during fermentation the cap was plunged up to 2 times per day. After fermentation was complete, the must was gently pressed and transferred into French Oak puncheons (21% new, 14% second use, 21% third use and 43% older) where MLF occurred before winter.
